This was my first attempt at fried chicken, and it went pretty well. The meat was incredibly moist and the coating was crunchy and tasty. The skin under the coating was…a little flabby. It was consistently flabby on all the pieces, so I had that going for me. While I really like fried chicken, I LOVE cold fried chicken. The leftovers we had the next day were fantastic. I took an online catering class through ed2go, because learning how to cater virtually made sense at the time. For me, it wasn’t the most conducive method to learn about setting up a catering business, but I did get some good recipes out of the class. This dip is my favorite. In my version, I am breaking one of the “rules” of catering—always use full fat ingredients. I’ve gone with reduced-fat sour cream, because I have taken to eating this almost daily.
